MELANZANA ALLA PARMIGIANA
a refined take on the Italian classic, with slow-cooked eggplant and aged Parmigiano.

TUNA CRUDO
fresh tuna with coconut crème fraîche, mango and estragon oil.

PUMPKIN RAVIOLI
handmade ravioli with pumpkin, iced almond, Parmigiano cream and balsamic reduction.

LIME SORBET
a refreshing pre-dessert to cleanse the palate.

BRAISED BEEF CHEEK
slow-cooked, served with carrot–ginger cream, fruit mustard and spinach.
